Thanks, I will try that modified for my own grill. No heroes here as this food is for me alone.

Wow! Forgot about my own thread! I am slow smokin' a full Beef Brisket for tomorrow. This one will finish about 08:00 in the morning. To be served as a TEXMEX Brisket to be eaten in Tacos with all the trimmings and Mexican beer! They are still in the smoker tenderizing on a slow cook, have already been smoked but are wrapped in foil with my secret sauce to finish tonight when I'm sleeping. Gonna be good!

Flying brisket injures woman during fight at Danville barbecue festival

    By Justin Madden

Meat started flying at a Danville barbecue festival during a fight between grill masters; brisket was the weapon.
Danville police were called to the Kentucky State BBQ Festival at 10:15 a.m. Sunday after a woman was hit with a brisket during a fight, according to a police news release.
Mary Berry, 35, of Bardstown told police she was hit in the right shoulder, neck and head by a brisket whose temperature was estimated to be 200 to 250 degrees. She was working at the festival for Fire House BBQ, the news release said.
Berry was treated at the festival by Boyle County emergency crews.
The brisket allegedly was thrown by barbecue pit master Mike Owings [more]

Was slow Smokin' a Boston Butt and remembered that over a year ago I told everyone I was rebuilding my Gas Grill. The Cheap Chinese steel was rusting away. I told the folks I would send a picture and promised to do that but forgot. So here they are all the black stuff was replaced with exception of the sheet metal. The whole thing was repainted. This thing should last longer than I do, I installed new Solid Stainless Steel cooking grates, new SS flame tamers, new Cast SS burners, a SS crossover support that holds up the burners, new igniters, new thermometer, fixed the Bottle weight gauge, Replaced the back panel that holds the Back Burner, Made a new front cross over support to hold up the doors, New casters AND a new SS Grease Pan. DAMN!!!
