    Here's one I wrote for Kar Crazy!

    Morning KC, sorry I didn't get back with you about the Pork Shoulder Marinade. Had a bunch of folks over and couldn't get to the computer. The rub sounds good, actually smoked pork is great and you really can't mess it up!! I use many different rubs and marinades one of the best for smoked pork is a marinade of:
    Salt
    Black pepper
    Garlic salt
    Cayenne pepper
    Red pepper flakes
    Rosemary
    A little oregano
    Sage
    Vegetable oil
    Marinate for 4 hours to overnight.
    I brown the pork on the BBQ prior to smoking to seal it, then smoke it fat side up.
    What makes it really good is to take some of the marinade and add about a cup of white vinegar, while it is smoking I baste the pork with the vinegar/marinade, gives it a great flavor. When done and is good and smoked you can eat it like it is or take it out of the smoker early and finish it in the oven. The wife likes her pork really tender so I take one more step.
    I finish it in the oven at about 200 degrees in a dutch oven or wrap it in heavy aluminum foil. Add a beer and a some of your favorite BBQ sauce, a little water, baste occasionally and cook it into submission, make sure to not let it go dry or the sauce will burn. It's done when the meat is falling off of the bone. Takes a long time but is well worth it!!

    I use something similar as a marinade for slow-cooking pork shoulder in the oven. My backyard has trees, birds, turtles, salamanders and.. ouch! yipe! ouch! mosquitos so I haven't set up the bbq. So even for those of us stuck with no backyard or nasty Fauna, this marinade works. <---yum!

    OMG..I'd love to have a backyard like that..critters are our friends and enjoyment.. Cept the squitos..

    I use to live in swamp, when the sun starts going down GO IN THE HOUSE!!
    Exactly, I've done it in the oven without the smoke---Still GOOD!!! If you deglaze the pan to the right consistancy the sauce is a killer over the meat or potatoes and for us Southerners RICE!!!!!
    It works on Boston Butts and ribs just don't over cook the ribs, you'll end up with a pile of bones.

    Here is a Smokin' BBQ trick:
    Hard to clean the BBQ Grate, heat it up hot to burn it off. When it is really hot use a Stainless Wire brush to clean it off. The trick is to spray it with water as you brush, the steam will clean all the gunk off easily!Pig_roast.gif Don't by those Brass or copper brushes they only last about a Month, Stainless last years!

    Thanks for the advise on using water to create steam. Something as simple as this I've never thought of.

    I think this weekend it will be Beef Brisket time. I like to get one of those 12 to 15 pound briskets, Smoke it with
    Mesquite, slice it against the grain and eat it with tortillas and all the trimmings, TexMex Style, OLE!!!!! Make mine spicy!!! false teeth.gif
